
All restaurants have their own different ways of showing their love for St. Patrick’s Day. Well over at The Tasty Yolk they took their “Sandwich Of The Month,” and put their own twist on an Irish Staple.
The Tasty Yolk “Sandwich Of The Month,” is called “The Corny Yolk.” You can look forward to house made corned beef, two eggs, Swiss cheese & sauerkraut topped with their million island sauce and served on marbled rye. Their ratios could not be more on point. From the beautifully marbled rye, to the thinly sliced sauerkraut, to the perfectly pink corned beef. Then the runny yolk and thousand island dressing mixes great with the stretchy nutty Swiss cheese. Creating the PERFECT sandwich.

The Tasty Yolk was established in 2016 by two lifelong friends, Michael Bertanza and Chef Eric Felitto. The Tasty Yolk started as a food truck, expanded to multiple food trucks, and has now grown into two storefront locations. The newest being right here in Stratford and the first Black Rock, opening back in 2019! Why Stratford? Chef Felitto and his wife Allison McHale are longtime Stratford residents, and are excited to be serving their community. They’re passionate about breakfast, so if you are too, The Tasty Yolk is a must-try. Their truck is also available for off-premise parties and events, so you can have a hearty breakfast any time, anywhere.

Eric Fellito is a Connecticut Native and began his culinary journey at a young age. He was asked by his brother and friends to cook his delicious bacon, egg and cheese sandwiches. His passion for cooking continued to grow while in high school. Eric received his Bachelor’s Degree in Culinary Arts from New England Culinary Institute and started working in Barcelona Wine Bar in Fairfield. Eric moved to Durango, Colorado where he honed his knowledge of Asian cuisine. He worked as Sushi Chef & Chef de Cuisine at East by Southwest. Later Eric helped open a second restaurant, a Thai themed restaurant known as the Zen Kitchen.
Eric then returned home to work at both Hotel Delamar restaurant locations. Eric was the Sous Chef of both Artisan Restaurant, in Southport, and L’escale, in Greenwich. This is where Eric picked up French and New England artisanal techniques. He was then given a chance to run his own restaurant, which he did for a while. Finally, this led him to The Chelsea in Fairfield. Here he ran an eclectic menu of all the various cooking styles he picked up along his culinary travels. The restaurant was under his watch for four years.
While working at the Chelsea, Eric and a childhood friend, Michael Bertanza decided to start a breakfast food truck, The Tasty Yolk. There are now a total of 4 food trucks, 3 of which vend to the public 6 days a week throughout Fairfield and Bridgeport. The trucks are also utilized for private events all over the Tri-state area. What started out as a side job has now turned into a successful business. He works primarily at the storefront where he can expand his culinary expertise beyond eggs and breakfast. He creates weekly specials of all different cuisines that keep him innovative.
In 2018, in the midst of running a successful business, Eric competed and won on Food Network’s Chopped. He competed in the breakfast battle and took out 3 other chefs to take home the W! Eric’s favorite thing to do is to cook for people and have them taste his food. If there’s an item you’re craving let him know and he’ll make you something delicious.
Mike Bertanza is a Fairfield native and graduate of the University of Miami Business School, Mike started off his career in banking and within a few years, became a Registered Financial Advisor. Growing up in the Northeast, Mike always appreciated a good breakfast sandwich and was amazed as he spent years living in other states where he could not find anything to compare. He often reminisces about a time at a Miami diner when he asked the server for a bacon egg and cheese and got just that: two eggs on a plate with melted cheese over them, bacon on the side.
